What you will need:
- 2 eggs
- Cream or Heavy Cream – 1/4 cup
- Parmesan – 1/3 cup
- Fresh diced Parsley or dried flakes
- Salt – 1/4 tsp
- Red pepper flakes – 1/2 tsp
- Bacon – 1/2 pound
- 3 mushrooms, chopped
- 1 small onion, chopped
- Pasta 1/2 pound
How to Make It :
- In a bowl, using a fork beat eggs, cream, Parmesan cheese, parsley, salt and red pepper flakes together in a bowl.
- Cook bacon until crispy, crumble and set aside. Reserve the bacon grease.
- Bring a pot of salted water to a boil and cook pasta according to instructions.
- Sauté onion and mushrooms in the bacon grease until the onions are soft and golden.
- Drain the pasta and add to the pan with the onions and mushrooms. Reduce the heat to low and pour cream mixture into the pasta. Cook on low heat, constantly stirring, for 2 minutes.
- Sprinkle with extra Parmesan cheese and serve hot.
