Try a traditional stir-fry from Spain! You can enjoy the dish on its own – and believe me it’s a truly outstanding combination of vegetables and spices – or you can just as well add 2 or 3 beaten eggs to make the dish more satisfying and filling!

What You Will Need :


  • Extra virgin olive oil – 1/3 cup
  • Garlic – 1 clove, minced
  • 2 medium potatoes, peeled & cut into cubes
  • 1 large onion, finely chopped
  • 1 red bell pepper, seeded & cut into chunks
  • 1 green bell pepper, seeded & cut into chunks
  • 1 eggplant, cut into small cubes
  • 1 zucchini, cut into small cubes
  • 4 large tomatoes, coarsely chopped
  • Paprika – ½ tsp
  • Cumin – ½ tsp
  • Water – ¼ cup
  • Salt – to taste
  • Pepper – to taste

How to Make It :

  1. In a large frying pan, add olive oil and garlic, heat. Add potatoes, sauté over medium heat, about 10 minutes. Add onion, bell peppers, sauté for another 10 minutes. Stir in zucchini and eggplant, sauté for additional 5 minutes. Add tomatoes, water and spices. Cook for 10 to 15 minutes or until the vegetables are tender.
