Slow Cooker Tuscan Tortellini Soup 




I love making a creamy and hearty soup for dinner, and this Slow Cooker Tuscan tortellini soup recipe fits the bill. You have tender and juicy chicken in a creamy and rich broth, tortellini filled with cheese, wilted spinach for the Italian twist of a tortellini soup.



INGREDIENTS

  • 1 lb. Boneless Skinless Chicken Breast
  • 4 Cups Chicken Broth
  • 2 – 15 oz. Cans of Diced Tomatoes
  • 1 Small Onion, Diced
  • 1 Tbsp. Minced Garlic
  • 1 Cup Heavy Cream
  • ½ Cup Grated Parmesan Cheese
  • 1 Tbsp. Italian Seasoning
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 Package of Refrigerated Tortellini
  • 2 Cups Fresh Spinach



INSTRUCTIONS

  1. Add All Ingredients except the Tortellini and Spinach to a large slow cooker
  2. Cover and Cook for 5 – 6 hours on High
  3. Remove Chicken and Shred with 2 Forks  or meat claw
  4. Add in Shredded Chicken, Tortellini and Spinach
  5. Cook another 1 hour on High and serve warm
  6. Top with Fresh Grated Parmesan Cheese if desired
